I love soup very much, and I enjoy eating any kind of food with broth. This is my favorite soup, and I always make it at home. The more I cook it, the more I become addicted to eating it, especially in winter, or rainy as it warms your body and feels good. I always eat it with spicy sambal and rice; it's so yummy!
Ingredients:
* 500 gr beef (cut into bite-sized pieces, preferable chuck or short rib)
* 1 liter beef broth
* 2 stalks lemongrass (lightly smashed to release flavor)
* 1 thumb-size piece of ginger (thinly sliced)
* 1 onion (sliced)
* 4 cloves garlic (minced)
* 1 tablespoon oil (for sautéing)
* 2 tablespoon fish sauce (optional for a deeper umami flavor)
* Salt and pepper to taste
* Fresh cilantro and lime (for garnish)
Instructions:
1. Prepare the Ingredients
* Cut the beef into bite-size pieces.
* Slice the onion and ginger, and smash the lemongrass to release its flavor
2. Sauté Aromatics:
* Heat the oil in a large pot over medium heat
* Add the minced garlic, sliced ginger, and onions, sautéing until fragrant (about 2-3 minutes)
3. Add Beef:
*Add the beef to the pot and sear on all sides until browned (about 5 minutes)
4. Add Lemongrass and Beef Broth:
* Pour in the beef broth and add the smashed lemongrass stalks.
* Bring the mixture to a boil, then lower the heat to a simmer
5. Simmer:
* Let the soup simmer for 25-30 minutes, or until the beef becomes tender
* Add salt, pepper, and fish sauce to taste
6. Serve:
* Once the beef is tender, remove the lemongrass stalks from the soup
* Serve hot, garnished with fresh cilantro and a wedge of lime for added brightness
* Eat with sambal and white rice
Optional Add-ins:
* Add vegetables like carrots or potatoes for more texture
* Serve with steamed rice or rice noodles for a complete meal
