Chicken Biryani

This time let's fly to India and try this recipe:

Ingredients:

- 2 cups Biryani rice

- 1 large red onion, thinly sliced

- 1 large white onion, thinly sliced

- 500 grams chicken, cut into pieces

- 2 tablespoons curry powder

- 4 cloves garlic, minced

- Fresh herbs (such as cilantro or mint), chopped

- 3 tablespoons cooking oil 

- Salt, to taste

- 4 cups water (for cooking rice)

- Bay leaf, cardamom, and cloves for added flavor 


1. Prepare the Rice:

- Rinse the Biryani rice under cold water until the water runs clear. Soak it in water for about 30 minutes, then drain.

2. Cook Chicken:

- In a large pot, heat the cooking oil over medium heat

- Add the sliced red and white onions and sauté until they are golden brown

- Add the minced garlic and sauté for another minute until fragrant.

- Add the chicken pieces to the pot and cook until they are browned on all sides.

- Stir in the curry powder and salt, mixing well to coat the chicken evenly. Cook for about 5 minutes.


3. Combine Ingredients:

- If using whole spices, add them to the pot now for additional flavor

- Add 4 cups of water to the pot and bring it to a boil. Once boiling, reduce the heat to low and let it simmer for about 10 minutes, allowing the chicken to cook through.


4. Cook the Rice:

- In a separate pot, bring water to a boil and add the soaked Biryani rice. Cook until the rice is about 70% done(it should still have a slight bite)

- Drain the rice and set aside


5, Layer the Biryani:

- In the pot with the chicken, layer the partially cooked rice on top of the chicken mixture.

- Sprinkle the chopped fresh herbs over the rice

- Cover the pot with a tight-fitting lid and cook on low heat for about 20-25 minutes. This allows the flavors to meld and the rice to finish cooking.


6. Serve:

- Once done, gently fluff the Biryani with a fork to mix the layers

- Serve hot, garnished with additional fresh herbs if desired

Note: if you want to add yogurt mix it with the Biryani rice and cook. Coconut is great too to cook with Biryani rice
