Ingredients:
* 2 medium- sized fish fillets (snapper, mackerel, or tilapia)
* 1 red onion, finely sliced
* 1 white onion, finely sliced
* 3 cloves garlic, minced
* 1 tsp turmeric powder
* 3 tbsp soy sauce
* 2 tbsp olive oil
* Salt and pepper to taste
* Lime wedges for garnish (optional)
Instructions:
1. Marinate the Fish:
* In a small bowl, mix turmeric, minced garlic, salt, pepper and 1 tbsp of olive oil
* Rub the mixture evenly on the fish fillets. Let it marinated for at least 15 minutes
2. Prepare the Onion Soy Glaze:
* Heat the remaining olive oil in a pan over medium heat.
* add the white and red onions, and sauté until they soften and start caramelize (about 5-7 minutes)
* Add soy sauce to the onions and stir well. Let it simmer for another 2-3 minutes until the sauce thickness slightly
3. Grill the Fish:
* Preheat your grill (or grill pan) over medium heat.
* Grill the marinated fish for 3 - 4 minutes on each side, depending on the thickness, until it is fully cooked and has nice grill marks.
4. Assemble:
* Place the grilled fish on a serving plate and drizzle the onion soy glaze over the top.
* Garnish the lime wedges and red onion for an extra burst of flavor.
Serve with steamed rice or vegetables for a complete meal! Oh! don't forget sambal!
