Sambal Aceh Kemangi

 

Ingredients:

* 2 cloves of garlic (finely chopped)

* Salt and Pepper

* 7 Pieces of bird's eye chili (blended

* 3 pieces of large red chili (blended)

* 2 shallots (finely chopped)

* Lime juice (as needed)

*Cucumber (remove the seeds, cut into small pieces)

* Jicama (Optional, cut into small pieces)

* 3 bunches of Kemangi leaves (coarsely chopped) you will find it in Asian Market

* 1/2 piece of brown sugar (to taste)

* 1 bunch of green onion (chopped)

* 1 cooking oil for sautéing

* 1/2 tea spoon of shrimp paste


Instructions:

* Blend the 7 bird's eye chilies, 3 large red chilies, shallots, a little brown sugar, and shrimp paste

* Prepare a bowl and pour in the cucumber, jicama (if using), and green onions; set aside.

*Heat oil in a pan, sauté kemangi leaves and stir until wilted. then add the cucumber, jicama, and green onions, and stir until evenly fragrant. Let it sit for 1 minute.

* Add the lime juice, salt, pepper and brown sugar to taste. Stir well and turn off the heat. Transfer to a serving dish.


This sambal Aceh is my own creation, and it tastes truly delicious and addictive. This food is from Aceh, Indonesian heritage. Sambal Aceh can be enjoyed with Empal (fried beef), Fried Chicken, Fried Fish, or any dish; it pairs perfectly with any side, especially when served with hot rice.
