Ingredients;
* 2 chicken breasts or thighs (with or without skin)
* 4 medium potatoes, cut into wedges
* 1 bunch of green kale, roughly chopped
* 3 tbsp olive oil
* Salt and pepper to taste
For the spicy sauce:
* 3 tbsp chili paste or sambal
* 2 cloves garlic, minced
* 1 tbsp soy sauce
* 1 tbsp honey
* 1 tbsp lime juice
* 1 tbsp olive oil
* 1. tbsp paprika
* 1/2 tsp cayenne pepper (adjust to taste)
* Salt to taste
Instructions:
1. Prepare the Spicy Sauce:
* Mix the chili paste, minced garlic, soy sauce, honey, lime juice, olive oil, paprika, cayenne pepper, and a pinch of salt. Adjust the level of spice according to your preference. Set aside.
2. Marinate the chicken:
* Rub the chicken with half of the spicy sauce. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge for more flavor)
3, Roast the Potatoes:
* Preheat the oven to 200C (400F). Toss the potato wedges with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15 - 20 minutes or until golden and crispy, flipping halfway.
4. Grill the Chicken:
* Heat a grill pan or outdoor grill over medium heat. Grill the marinated chicken for about 20 - 25 minutes on each side, and brush with more spicy sauce as it cooks. Cook until the internal temperature reaches 75C (165F), or until the chicken is fully cooked and juicy.
5. Sauté the Kale:
* Heat 1 tablespoon of olive oil over medium heat. Add the chopped kale and a pinch of salt. Sauté for about 5 minutes until it wilts and becomes tender but still bright green.
6. Serve:
Plate the grilled chicken, roasted potatoes, and sautéed kale. Drizzle the remaining spicy sauce over the chicken for extra heat and flavor.
